Beet Shrimp Tacos & Hibiscus Lime Cocktail – A Superfood Recipe by Chef Isa

What you’ll need:
Superfoods: Avocado, Hibiscus, Lime, Beets
Ingredients:
For tortillas (9 tortillas):
- ½ a cup of beetroot juice
- ½ tsp of salt
- 2 cups of instant Masa corn flour
- 1 ½ cups of warm water
To assemble:
- 1 avocado, sliced
- 2 limes, cut into wedges
- 1 pound of shrimp, previously seasoned and cooked
- 1 cup of cherry tomatoes, sliced
- ½ an onion sliced and reserved in a glass with cold water and ice
- ½ cup of chopped cilantro
For Hibiscus lime cocktail:
- 2 cups of hibiscus tea
- ¼ cup of lemon juice
- 1 cup of ice
- 1 oz of tequila
- Strawberries and lemon slices for garnish
Instructions
Prepare the tortilla by mixing warm water, beet juice, and salt. Add corn flour and combine until a dough consistency is formed. Divide the dough into 9 tennis-sized balls.
With the help of a plate, press down the tortilla balls. Place the tortillas into the pan on the stovetop and cook each side for 1 minute.
Cover cooked tortillas with a cloth napkin to keep them soft and warm.
Add sliced avocado, cooked shrimp, sliced tomatoes, and
crispy raw onions to your tortillas.
Prepare your hibiscus cocktail by mixing together tea, lemon juice, tequila, and ice. Add strawberries and citrus fruits for color.
