Turkey & Quinoa Stuffed Peppers – A Superfood Recipe by Chef Isa
A healthy rainbow of sweet red, yellow, and orange bell peppers, ground turkey, quinoa, and fresh mozzarella! Prepped in less than 30 minutes - these Turkey Quinoa Stuffed Peppers make a fun and super easy, low-carb dinner recipe. Cook them in one skillet pan for easy serving and cleaning.
You can stuff them with any protein & toppings of your choice!
What you’ll need:
Superfoods: Quinoa
Ingredients
- 3 tbsp of olive oil
- 1/2 onion , diced
- 1 lb. ground turkey
- 1 cup of tomato sauce
- 1 tsp paprika
- 1/2 tsp cumin
- 1 cup of Quinoa
- 1 cup of water
- 7 bell peppers
- 1 cup of mozzarella cheese
- Some Salt and pepper
Instructions
Heat the skillet over high heat.
Add olive oil and start cooking the diced onion, until softened.
Brown the ground turkey, and heat for 5 minutes or until cooked through.
Sprinkle salt, pepper, cumin, and paprika and add the tomato sauce.
Cook the quinoa and add a cup of water, lower the heat, and mix until combined.
Cut off the tops of the peppers, spoon out the ribs and seeds, and fill the peppers with the quinoa and turkey.
Put the bell peppers back in the skillet and top them with cheese.
Place the pan in the oven for about 7 minutes at 350°F or until the cheese is melted.
