Grapefruit Roasted Salmon with Cauliflower Rice – A Superfood Recipe by Chef Isa

Whether you're entertaining a small crowd or just taking it easy at home. Chef Isa cooked this salmon perfectly and accompanied it with the ideal substitute for rice, the famous cauliflower rice! A recipe naturally loaded with full nutrients and good flavor!

What you’ll need:

Superfoods: Garlic and Grapefruit

Ingredients

  • 6 oz of fresh salmon
  • 1/2 sliced grapefruit
  • 3 fresh rosemary sprigs
  • 1 large head of cauliflower
  • 1/2 lemon juice
  • 1 tbsp coconut oil
  • 1 tbsp of fresh ginger
  • 2 garlic cloves
  • Pinch Salt and pepper
  • Some Chopped cilantro for garnishing

Instructions

Preheat the oven to 350F

In a baking tray add salmon, salt pepper, sliced grapefruit, and rosemary, and take it to the oven for about 15 – 20 minutes.

Prepare the cauliflower rice. Cut the cauliflower into chunks, including the cores. Place into a food processor. Pulse until the cauliflower resembles the texture of rice. Work in batches, if necessary, and be careful not to over-process.

Heat a pan over medium-high heat add coconut oil, garlic, and ginger, and stir until brown, add cauliflower rice, lemon juice, salt, and pepper, and mix for 5 minutes.

Serve salmon over rice and garnish with chopped cilantro.
