- 1/2 cup oat flour (made by blending rolled oats)
- 1/2 cup fresh spinach leaves
- 1/2 ripe banana
- 1 egg
- 1/4 cup milk or formula (use a dairy-free option if needed)
- 1/4 cup blueberries
- 2 tbsps nut butter (almond, peanut, or your choice)
- 1/4 cup fresh strawberries
- 1/4 cup fresh pineapple
- 1/4 cup yogurt (Greek or regular)
Instructions
Start by preheating your waffle maker.
In your blender, combine the oat flour, fresh spinach, ripe banana, egg, and milk. Blend until you have a smooth mixture.
Pour the waffle batter into your preheated waffle maker and cook until they’re golden and crisp. If using a skillet, make small pancakes and cook them until both sides are nicely browned.
Spread the nut butter on top of your waffles or pancakes, adding a swirl for an extra touch, and add your fresh strawberries and pineapples on top
