What you’ll need: Seasonal ingredients: Bananas and Strawberries

Ingredients

  • 1/2 cup oat flour (made by blending rolled oats)
  • 1/2 cup fresh spinach leaves
  • 1/2 ripe banana
  • 1 egg
  • 1/4 cup milk or formula (use a dairy-free option if needed)
  • 1/4 cup blueberries
  • 2 tbsps nut butter (almond, peanut, or your choice)
  • 1/4 cup fresh strawberries
  • 1/4 cup fresh pineapple
  • 1/4 cup yogurt (Greek or regular)

Instructions

Start by preheating your waffle maker.

In your blender, combine the oat flour, fresh spinach, ripe banana, egg, and milk. Blend until you have a smooth mixture.

Pour the waffle batter into your preheated waffle maker and cook until they’re golden and crisp. If using a skillet, make small pancakes and cook them until both sides are nicely browned.

Spread the nut butter on top of your waffles or pancakes, adding a swirl for an extra touch, and add your fresh strawberries and pineapples on top

In a kid-friendly bento box, place the waffles or pancakes, arranging them attractively. You can add extra fruits and yogurt on the side.
