Lemon Mint Chicken with Yogurt Sauce – A Superfood Recipe by Chef Isa
You can’t beat the flavor of lemon and mint. Try this Lemon Mint Chicken with Yogurt sauce created by Chef Isa. The freshness of the ingredients along with the tasty yogurt dressing makes this recipe perfect and easy to prep for the week ahead!
What you’ll need:
Superfoods: Farro, Yogurt, Lemon
Ingredients
- 2 lb. of chicken breast
- 1 tbsp Olive oil
- 4 garlic cloves
- 1/2 onion , diced
- 1 lemon
- 2 cups of Farro
- 1/2 cup of red wine
- 2 1/2 cups of vegetable broth
- 6 mint leaves
- 1 cup Greek yogurt
- 1/2 lemon
- Some Dill for garnish
- 1 cup of feta cheese , cut into cubes
- Pinch Salt and Pepper
Instructions
Heat a skillet on medium-high heat, add oil, and sear chicken breast until golden brown; season with salt, pepper, and lemon juice.
Remove chicken from the skillet and set aside.
To the same skillet add vegetable broth, season with salt and pepper, and add mint leaves.
Lower heat to low and let it simmer.
Add yogurt, salt, pepper, lemon juice, and dill to a mixing bowl for the yogurt sauce.
After the farro has softened, remove mint leaves, add chicken breast cut into small pieces, and turn off the heat.
Garnish with yogurt sauce, feta cheese, dill, and mint leaves.
